QU\u2019EST-CE QUI A DECLENCHE VOTRE PASSION ?<\/span><\/strong><br \/><\/span><\/p>\n<p style=\"text-align: justify;\"><span style=\"font-weight: 400;\">Mon parcours en photographie a commenc\u00e9 \u00e0 l\u2019\u00e9cole lorsque mon professeur d\u2019art m\u2019a dit que je n\u2019obtiendrais\u00a0 pas mon dipl\u00f4me et que je devrais plut\u00f4t m\u2019orienter vers la photographie. <br \/>C\u2019\u00e9tait assez brutal de sa part, mais\u00a0 au moins il \u00e9tait honn\u00eate. Mon p\u00e8re a toujours \u00e9t\u00e9 dans la photographie et il m\u2019a achet\u00e9 un petit appareil photo\u00a0 appel\u00e9 Cosmic Symbol qui a marqu\u00e9 le d\u00e9but de mon voyage photographique. OU PUISEZ-VOUS VOTRE<br \/>INSPIRATION ?<\/strong><\/span><\/p>\n<p style=\"text-align: justify;\"><span style=\"font-weight: 400;\">Je ne me d\u00e9crirai pas comme un pur photographe culinaire, car la plupart des aliments que je photographie\u00a0 mettent surtout en avant les ustensiles et gadgets de cuisine. <br \/><br \/>Cependant, je suis vraiment passionn\u00e9 par la\u00a0 nourriture et la cuisine. Je pense que cela se refl\u00e8te dans mon travail, car je comprends le temps et les efforts\u00a0 qui ont \u00e9t\u00e9 n\u00e9cessaires pour la cr\u00e9ation du plat. L\u2019un de mes objectifs est d\u2019ailleurs d\u2019obtenir une qualification\u00a0 en \u0153nologie. J\u2019ai toujours \u00e9t\u00e9 intrigu\u00e9 par les chefs qui r\u00e9ussissent \u00e0 cr\u00e9er de beaux plats dans des\u00a0 environnements chaotiques.\u00a0<\/span><\/p>\n<p style=\"text-align: justify;\"><span style=\"font-weight: 400;\">J\u2019ai beaucoup de sources d\u2019inspiration, notamment \u00e0 travers la t\u00e9l\u00e9vision et le cin\u00e9ma avec, par exemple, la s\u00e9rie\u00a0 Peaky Blinders et ses beaux visuels, ses \u00e9clairages et sa cin\u00e9matographie.<\/span><\/p>\n<p><strong><span style=\"color: #ff9900;\">COMMENT AVEZ-VOUS TROUVE VOTRE STYLE UNIQUE ? QUEL A ETE VOTRE PLUS GRAND DEFI ?<\/span><\/strong><\/p>\n<p style=\"text-align: justify;\"><span style=\"font-weight: 400;\">Je dirais que mon style signature est simple, dramatique, atmosph\u00e9rique, et toujours avec un soup\u00e7on de\u00a0 noirceur. <br \/>En photographie culinaire, de nombreux styles sont dict\u00e9s par les r\u00e9seaux sociaux.<br \/><br \/>Pour ma part, je\u00a0 pr\u00e9f\u00e8re lorsqu\u2019il y a un minimum d\u2019accessoires, de sorte que l\u2019image mette en lumi\u00e8re la nourriture ou le plat.\u00a0 Ce qui compte \u00e9galement, c\u2019est votre \u00e9quipe. Ainsi, trouver de bons stylistes qui constituent de beaux plats est\u00a0 souvent plus difficile que de prendre la photo. <\/span><\/p>\n<p><strong><span style=\"color: #ff9900;\">POURQUOI AVEZ-VOUS CHOISI PHASE ONE ? COMMENT CELA VOUS AIDE-T-IL DANS VOTRE<\/span><\/strong><br \/><strong><span style=\"color: #ff9900;\">TRAVAIL ?<\/span><\/strong><\/p>\n<p style=\"text-align: justify;\"><span style=\"font-weight: 400;\">J&rsquo;ai essay\u00e9 mon premier dos num\u00e9rique Phase One dans les studios CHS en 2001. Nous avons d\u00e9cid\u00e9 de faire des\u00a0 d\u00e9mos et de les tester sur notre syst\u00e8me Mamiya RZ67, car vous pouviez les utiliser avec tous les bo\u00eetiers et\u00a0<\/span><\/p>\n<p style=\"text-align: justify;\"><span style=\"font-weight: 400;\">objectifs via un adaptateur. \u00c0 l&rsquo;\u00e9poque, il offrait 6 millions de pixels et c&rsquo;\u00e9tait un choix assez s\u00fbr. Notre studio a\u00a0 donc \u00e9t\u00e9 l&rsquo;un des premiers du pays \u00e0 faire le changement. Le reste appartient \u00e0 l&rsquo;histoire et maintenant nous\u00a0 arrivons \u00e0 notre 20\u00e8me anniversaire de tournage avec Phase One. Cela a n\u00e9cessit\u00e9 un apprentissage laborieux,\u00a0 avec notamment l\u2019utilisation nouvelle du Mac et celle du nouveau syst\u00e8me d\u2019appareil photo num\u00e9rique.\u00a0<\/span><\/p>\n<p style=\"text-align: justify;\"><span style=\"font-weight: 400;\">A pr\u00e9sent, nous utilisons dans les studios du CHS le syst\u00e8me de cam\u00e9ra Phase One XF IQ avec le Schneider\u00a0 Kreuznach 55mm F2.8 LS, 80mm F2.8 LS et bien s\u00fbr le 110mm F2.8. Nous avons en fait deux exemplaires de ce\u00a0 dernier, car il est tr\u00e8s populaire aupr\u00e8s de tous nos photographes. <br \/>J&rsquo;aime beaucoup la simplicit\u00e9 et l&rsquo;adaptabilit\u00e9\u00a0 des syst\u00e8mes Phase One. Cependant, la caract\u00e9ristique la plus remarquable est la qualit\u00e9 de l&rsquo;image. Chaque\u00a0 miette et chaque goutte sont \u00e0 un autre niveau. Travailler en Moyen Format ralentit un peu le processus, ce qui\u00a0 me laisse plus de temps pour me concentrer sur la partie cr\u00e9ative.<br \/><br \/>Avoir \u00e9galement la possibilit\u00e9 de prendre des\u00a0 photos en mode connect\u00e9 avec Capture One Pro est un v\u00e9ritable atout pour moi et le styliste. Capture Pilot aide\u00a0 les stylistes \u00e0 effectuer des r\u00e9glages rapides sur le plateau sans avoir \u00e0 retourner au poste de travail principal\u00a0 pour visualiser l&rsquo;image. Cela a \u00e9galement \u00e9t\u00e9 tr\u00e8s utile pendant le confinement, car cela nous a permis de\u00a0 partager des shootings \u00e0 distance avec les clients. C&rsquo;est un juste milieu entre l\u2019objectif standard et le t\u00e9l\u00e9objectif.<br \/>La\u00a0 distance focale est id\u00e9ale pour des prises de vue avec une profondeur de champ minimale et une compression\u00a0 parfaite.<br \/>Cela permet d&rsquo;\u00e9loigner l\u2019appareil photo et facilite les changements par le styliste. Vous pouvez\u00a0 \u00e9galement positionner l\u2019\u00e9clairage plus pr\u00e8s du sujet gr\u00e2ce \u00e0 un angle de vue plus serr\u00e9, ce qui est tr\u00e8s utile en\u00a0 photographie culinaire. <br \/>Cela aide \u00e0 faire ressortir un produit. C&rsquo;est pourquoi j&rsquo;aime \u00e9galement l&rsquo;utiliser pour la\u00a0 photographie de portrait. Lianne, la styliste avec<br \/>laquelle j&rsquo;ai travaill\u00e9 sur cette image, a essay\u00e9 plusieurs<br \/>consistances diff\u00e9rentes de meringue pour obtenir les pics parfaits que nous voulions. <br \/>La cr\u00e9ation de ces couches vierges \u00e9tait tout un d\u00e9fi. J&rsquo;ai utilis\u00e9 l&rsquo;objectif 110 mm et pris une photo l\u00e9g\u00e8rement en dessous pour accentuer les pics.<br \/>L&rsquo;\u00e9clairage est d\u00e9compos\u00e9 en trois sections avec une boite a lumi\u00e8re pour l&rsquo;avant, une grille nid d\u2019abeille pour l&rsquo;arri\u00e8re-plan et un petit spot pour r\u00e9tro\u00e9clairer la fum\u00e9e.<br \/><br \/><\/p>\n<hr \/>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"wp-image-4552 alignleft\" src=\"https:\/\/blog.prophot.com\/wp-content\/uploads\/2021\/10\/Photo-5.png\" alt=\"\" width=\"311\" height=\"415\" srcset=\"https:\/\/www.prophot.com\/blog\/wp-content\/uploads\/2021\/10\/Photo-5.png 532w, https:\/\/www.prophot.com\/blog\/wp-content\/uploads\/2021\/10\/Photo-5-224x300.png 224w\" sizes=\"auto, (max-width: 311px) 100vw, 311px\" \/><\/p>\n<p>\u00a0<\/p>\n<p style=\"text-align: justify;\">Il aurait \u00e9t\u00e9 plus facile de capturer ces brochettes en \u00e9tant en-dessous, mais nous voulions que le pesto coule le long.<br \/>Ainsi, apr\u00e8s un court passage sur le grill, les brochettes ont \u00e9t\u00e9 plant\u00e9es dans de la mousse. <br \/>La touche finale a \u00e9t\u00e9 donn\u00e9e par le chalumeau pour cloquer les tomates et l\u2019ajout d\u2019un filet de pesto. Ici, nous avons utilis\u00e9 trois<br \/>lumi\u00e8res Profoto : une grande bo\u00eete \u00e0 lumi\u00e8re diffuse pour l&rsquo;avant, une bo\u00eete \u00e0 lumi\u00e8re strip verticale et une bo\u00eete \u00e0 lumi\u00e8re avec grille nid d\u2019abeille pour l&rsquo;arri\u00e8re-plan.<\/p>\n<hr \/>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"wp-image-4554 alignright\" src=\"https:\/\/blog.prophot.com\/wp-content\/uploads\/2021\/10\/Photo-6.png\" alt=\"\" width=\"296\" height=\"393\" srcset=\"https:\/\/www.prophot.com\/blog\/wp-content\/uploads\/2021\/10\/Photo-6.png 557w, https:\/\/www.prophot.com\/blog\/wp-content\/uploads\/2021\/10\/Photo-6-226x300.png 226w\" sizes=\"auto, (max-width: 296px) 100vw, 296px\" \/><\/p>\n<p style=\"text-align: justify;\"><br \/><br \/>Pour cette image, je voulais obtenir quelque chose d&rsquo;un<br \/>peu plus abstrait, et j&rsquo;ai toujours \u00e9t\u00e9 fascin\u00e9 par les motifs du sucre fil\u00e9. <br \/>Apr\u00e8s avoir cr\u00e9\u00e9 la matrice de sucre fil\u00e9, elle a \u00e9t\u00e9 accroch\u00e9e \u00e0 un morceau de fil de p\u00eache devant le fond, que j&rsquo;ai retouch\u00e9 en post-production.<br \/>L&rsquo;objectif 110 mm \u00e9tait parfait pour cette image. A f\/3.5, j&rsquo;ai pu obtenir une mise au point minimale sur le sucre, tout en gardant l&rsquo;arri\u00e8re-plan vraiment doux. <br \/><br \/>Quant \u00e0 l&rsquo;\u00e9clairage, nous avons \u00e0 nouveau utilis\u00e9 trois lumi\u00e8res Profoto : une petite bo\u00eete \u00e0 lumi\u00e8re carr\u00e9e en face du sujet, une bo\u00eete \u00e0 lumi\u00e8re avec grille nid d\u2019abeille pour r\u00e9tro-\u00e9clairer la matrice de sucre et une autre identique pour le fond.<\/p>\n<hr \/>\n<p><span style=\"font-weight: 400; color: #ff9900;\"><strong>QUELS SONT VOS PROJETS A VENIR ?\u00a0<\/strong><\/span><\/p>\n<p style=\"text-align: justify;\">Je travaille actuellement sur un livre \u00ab Produce to Plate: Recipes and Culinary stories from Mull and Iona1 \u00bb. Il y a beaucoup de bons producteurs sur les \u00eeles \u00e9cossaises, et je pr\u00e9vois de faire des shootings documentaires sur eux. Ensuite, l\u2019id\u00e9e serait de travailler avec des chefs locaux qui cr\u00e9erait des recettes \u00e0 partir de produits de ces producteurs et je capturerais les plats finalis\u00e9s. <br \/>Un autre de mes objectifs est de remporter le concours Pink Lady Photographer dans la cat\u00e9gorie portrait culinaire.<br \/>Apr\u00e8s toutes ces ann\u00e9es pass\u00e9es dans la photographie, je continue d\u2019apprendre et de relever les d\u00e9fis de chaque shooting qui arrive dans le studio.<br \/>La photographie est plus qu\u2019un travail pour moi ; le travail des autres me procure de la joie de et de l\u2019inspiration. That was quite blunt from him, but at least he was honest.<br \/>My dad was always into photography and he bought me a little Russian camera, which was called Cosmic Symbol and that marked the beginning of my photography journey. I would start copying adverts from the weekend papers and magazines to learn more about the industry. Then in college I actually learned fundamental skills for shooting glassware, food, high key, low key etc. In the mid-eighties I moved to London, the hotspot for iconic high-end adverts, and assisted advertising photographers. There I got inspired by these iconic adverts like the Benson and Hedges campaign but also Clive Arrowsmith\u2019s celebrity portraits and I started to obsess over lighting and details. Back then photography was more slow-paced and photoshop wasn\u2019t even on the horizon, so you had to do everything right in camera.<br \/><br \/><\/p>\n<p style=\"text-align: justify;\"><strong><span style=\"color: #ff9900;\">WHAT BROUGHT YOU TO FOOD PHOTOGRAPHY AND WHERE DO YOU GET YOUR INSPIRATION?<\/span><\/strong><br \/><br \/>I wouldn\u2019t describe myself as a pure food photographer, as most of the food that I shoot is supporting an image for kitchen appliances and gadgets. However, I am really passionate about food and cooking, my Thai green curry from scratch is pretty damn good. I think that this is reflected in my work, because I understand the time and effort that has gone into creating the dish. Food is just a general interest of mine, for instance getting a wine qualification is one of my goals. I have always been intrigued by chefs creating beautiful dishes in chaotic environments. So, I can get inspired by many things, usually though through television and film, for example the tv show peaky blinders with its beautiful visuals, lighting and cinematography.<br \/><br \/><\/p>\n<p style=\"text-align: justify;\"><span style=\"color: #ff9900;\"><strong>HOW DID YOU END UP WITH PHASE ONE AND HOW DOES IT SUPPORT YOU IN YOUR WORKFLOW?<\/strong><br \/><br \/><\/span>I tried out my first Phase One digital back at CHS studios in 2001. We decided to get some demos and test them on our Mamiya RZ67 system, as you could use them with all bodies and lenses via an adapter. <br \/>Back then it offered 6 million pixels and it was a pretty clear choice, so our studio was one of the first ones in the country to make the switch. The rest is history and now we are coming to our 20th anniversary of shooting with Phase One and it was definitely a steep learning curve, figuring out how to use a Mac let alone a new digital camera system.<br \/><br \/>Now we use the Phase One XF IQ camera system with the Schneider Kreuznach 55mm F2.8 LS, 80mm F2.8 LS and of course the 110mm F2.8 at the CHS studios. We actually have two of the latter one, as it is very popular with all our photographers. I really like the simplicity and adaptability of the Phase One systems. However, the most outstanding feature of the Phase One systems is the image quality. Every crumb and drip are on another level.<br \/><br \/>Working with medium-format does slow down the process a little bit, which gives me more time to focus on my creative process. Also having the option of tethered shooting with Capture One Pro is a real asset for me and the stylist. <br \/>Capture Pilot helps stylists make quick adjustments on set instead of having to return to the main<br \/>workstation to view the image. This has been also very useful during the lockdown, as it gave us the opportunity to share shoots remotely with clients. Then of course the ability to focus stack images and control of Profoto Air flash are also very helpful, and I don\u2019t want to miss it.<\/p>\n<p style=\"text-align: justify;\"><strong><span style=\"color: #ff9900;\">WHEN IT COMES TO LENSES, WHAT QUALITIES DO YOU PRIORITIZE FOR FOOD PHOTOGRAPHY?<br \/><\/span><\/strong><br \/>Without a doubt, I use the Schneider Kreuznach 110mm F2.8. It\u2019s a lens that fills the gap between standard and telephoto and the focal length is ideal for shooting with a minimal depth of field and the perfect amount of compression. <br \/>It enables you to move the camera away from the set and allows our stylist to make changes easier.<br \/>You can also get more lighting closer to the subject, due to the narrower angle of view, which is very useful in food photography. It really helps you to make a product stand out from the background. <br \/>This is why I also like to use it for portrait photography. The 110mm lens has become my go-to-choice to the extent that I structure my thoughts and creative process around it, because I know exactly what I\u2019m going to get. The 80mm lens is also a great lens, but I personally love the compression that the 110mm lens gives you.<\/p>\n<hr \/>\n<p><span style=\"color: #ff9900;\"><strong>HOW WAS IT SHOT?<\/strong> <img loading=\"lazy\" decoding=\"async\" class=\"wp-image-4551 alignright\" src=\"https:\/\/blog.prophot.com\/wp-content\/uploads\/2021\/10\/Photo-4.png\" alt=\"\" width=\"276\" height=\"375\" srcset=\"https:\/\/www.prophot.com\/blog\/wp-content\/uploads\/2021\/10\/Photo-4.png 545w, https:\/\/www.prophot.com\/blog\/wp-content\/uploads\/2021\/10\/Photo-4-221x300.png 221w\" sizes=\"auto, (max-width: 276px) 100vw, 276px\" \/><br \/><\/span>This image is a perfect example for the collaboration that is required in food photography.<br \/>Lianne, the stylist I worked with on this image, tried several different consistencies of meringue to get the perfect peaks that we wanted. Creating these pristine layers was quite the challenge. I used the 110mm lens and shot from slightly below to accentuate the peaks.<br \/>The lighting is broken down into three sections with a soft box for the front, a gridded dish<br \/>for the background and a tiny spot to backlit the smoke.<\/p>\n<p>\u00a0<\/p>\n<hr \/>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"wp-image-4552 alignleft\" src=\"https:\/\/blog.prophot.com\/wp-content\/uploads\/2021\/10\/Photo-5.png\" alt=\"\" width=\"268\" height=\"358\" srcset=\"https:\/\/www.prophot.com\/blog\/wp-content\/uploads\/2021\/10\/Photo-5.png 532w, https:\/\/www.prophot.com\/blog\/wp-content\/uploads\/2021\/10\/Photo-5-224x300.png 224w\" sizes=\"auto, (max-width: 268px) 100vw, 268px\" \/><\/p>\n<p>\u00a0<\/p>\n<p style=\"text-align: justify;\">It would have been the easiest to shoot these kebabs overhead, but we wanted the pesto to drip down. <br \/>So, after a short spell under the grill the kebabs were spiked into florist\u2019s oasis. The final touch was given by a blowtorch to blister the tomatoes and a drizzle of pesto. Here, we used three Profoto lights: One large diffused soft box for the front, a strip light from the right for the height and a gridded dish for the background.<\/p>\n<p>\u00a0<\/p>\n<hr \/>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"wp-image-4554 alignright\" src=\"https:\/\/blog.prophot.com\/wp-content\/uploads\/2021\/10\/Photo-6.png\" alt=\"\" width=\"285\" height=\"379\" srcset=\"https:\/\/www.prophot.com\/blog\/wp-content\/uploads\/2021\/10\/Photo-6.png 557w, https:\/\/www.prophot.com\/blog\/wp-content\/uploads\/2021\/10\/Photo-6-226x300.png 226w\" sizes=\"auto, (max-width: 285px) 100vw, 285px\" \/><\/p>\n<p>\u00a0<\/p>\n<p style=\"text-align: justify;\">For this image, I wanted to shoot something a little bit more abstract, and I\u2019ve always been fascinated by the patterns of spun sugar. After creating the spun sugar matrix, it was hung by a piece of fishing wire in front of the background, which I retouched in post-production. <br \/>The 110mm lens was perfect for this image. Shooting at F3.5, I was able to get the minimal focus on the sugar, while keeping the background really soft. As for the lighting, we again used three Profoto heads, a small square soft box on the front, a gridded dish to backlit the sugar matrix and another gridded dish to for the background.<\/p>\n<p>\u00a0<\/p>\n<hr \/>\n<p><strong><span style=\"color: #ff9900;\">WHAT ARE YOUR UPCOMING PROJECTS?<br \/><\/span><\/strong><br \/>I\u2019m currently working on a book \u201cProduce to Plate: Recipes and Culinary stories from Mull and Iona\u201d. There are many good food producers on the Scottish islands, and I plan to shoot documentary stories of them. The idea is then to work with local chefs, who will create recipes from the island producers, so that I can shoot the final dish.<br \/>Another goal is of course to shoot that winning image for the Pink Lady Food Photographer competition in the food portraiture category. After all these years being involved in photography, I\u2019m still learning, and I still relish the challenge of the different shoots that come into the studio.
